One time, when we were working hard late into the night, tasting and selecting the best rums, he let it slip that he stopped going to school at the age of 10. That somehow there was no time. I say to him, “Ruíz, you may not have gone to school for very long, but to me, you are a teacher worth as much as the entire professoriate”. He just laughed and said – we have a saying in Spanish:
Cuando el alumno está listo, aparece el maestro.
When the student is ready, the teacher will appear.
I remembered this story when we had the final rum blended and were coming up with a name. Professoriate. Professorado. So cheers to you Ruíz, the teacher!
Story of the Brand
To create a brand-new rum? That’s no easy task, especially for a Central European. Central America is not like walking into a supermarket. You need a guide. Someone who knows their stuff and who will take you, the gringo, under their protective wing. My teacher was Ruíz.
A guy for whom rum is his entire life. He gave me tips and helped me choose. He knew exactly which rums could be blended, and which ones could not. He laughed at the scammers who wanted to trick us with low-quality swill. He was opening doors where that would have been otherwise been closed to me. From his look alone, I knew this was the real deal. Or not. Moreover, he always had tonnes of energy, and his good mood never left him.

0.5 cl Giffard Fig syrup
2 dashes Angostura bitters
Decoration: fig, orange peel
Glass: Double old fashioned glass
Preparation method: Pour all ingredients into the serving glass, add ice cubes, stir for about 30 seconds to combine the ingredients and gently release some water from the ice.

2 cl lime juice
10 cl ginger beer
Decoration: slice of lime, lemon grass

Preparation method: Pour all ingredients into the serving glass, stir gently with ice.
Birra con Mojito
2 cl lime juice
1.5 cl Giffard Sugar syrup
Beer – light lager / Soda
Decoration: mint leaves, slice of lime

Preparation method: Pour all ingredients into the serving glass, top with ice, finish with beer or soda, and stir gently.
Tropical TIKI Professorado
2 cl Giffard Mango purée
2 cl coconut milk
6 cl pineapple juice
Decoration: pineapple leaves, mango slices, coconut chips, mint
Glass: Tiki glass or Long drink glass
Preparation method: Add all ingredients into a shaker – stir and pour over ice into the serving glass.
Jasmine Professorado tea
1 cl Giffard Guava syrup
10 cl jasmine tea
5 cl soda
pink grapefruit – sliced
Decoration: grapefruit peel, mint
Glass: Long drink glass/Highball
Preparation method: Pour all ingredients into the serving glass, top with ice and stir gently.
